Good King Henry is a traditional European green known for its rich, spinach-like flavour and versatility in the kitchen. Often called “poor man’s asparagus” or “perennial spinach,” its tender shoots, young leaves, and flower buds are all edible and highly nutritious.
The young shoots can be prepared like asparagus—steamed, sautéed, or added to quiches and omelettes—while the leaves are excellent in soups, stews, or simply wilted with garlic and olive oil. With a slightly earthy taste and high iron and vitamin content, Good King Henry makes a wholesome and flavourful addition to seasonal dishes.
