Orange Honey Glazed Ham Roast

Ingredients
- (¼ cup) orange marmalade or fresh orange juice
- (2 tablespoons) liquid honey
- (1 tablespoon) Dijon mustard
- (½ teaspoon) ground ginger
- (1 teaspoon) orange zest from 1 medium orange
- (A few grinds) black pepper
- (1 to 2 cups) water for the roasting pan
- (about 4 lb) Old Fashioned Ham (4 - 7 lb)
Directions
- Preheat the oven: Set it to 325 °F or 165 °C.
- Prepare the ham: Pat the ham dry. If there is a layer of fat, score it in a criss-cross pattern about 1 cm deep. Press in some cloves if you like for a little extra flavour.
- Make the glaze: Stir together the orange marmalade or juice, honey, Dijon mustard, ginger, orange zest, and a little black pepper. Taste it and adjust if you like a bit more sweetness or tang.
- Roast the ham: Put the ham fat side up on a rack in a roasting pan. Pour in 1 to 2 cups of water to keep it moist. Brush half the glaze over the ham. Roast it in the oven for 1 hour 45 minutes to 2 hours. Every 30 minutes, spoon some of the pan juices over the ham or brush with a bit more glaze.
- Caramelize the top: In the last 15 minutes, brush on the remaining glaze and turn the oven up to 400 °F or 200 °C. Let it bubble and get a nice golden colour.
- Rest and serve: Take the ham out of the oven, cover it loosely with foil, and let it rest for about 15 minutes. Then carve it around the bone and pour some of the pan glaze over the slices.
