Leaner than beef and lower in fat and cholesterol, this cut is packed with iron and offers a subtly sweet taste for marinating and grilling. It’s a great all-purpose cut for grilling, roasting, broiling, or sautéing. However, because it’s so lean, it can become dry and tough if overcooked or sliced too thickly. To get the best out of it, cook it to no more than medium and slice it thinly against the grain for a tender, juicy result.
